ingredients
- 1 pound cooked pasta, drained and rinsed with cold water. Tri-color rotini works well
- 1 cup assorted diced veggies such as bell peppers and carrots
- 1 cup shredded mozzarella or other cheese
- 4 oz. sliced or diced salami
- 1/2 cup halved cherry tomatoes (optional)
- dressing mixture below
- 1/2 jar (4 oz.) of THE GRACIOUS GOURMET FARMHOUSE TOMATO JAM
- juice of 1/2 to a whole lemon
- Salt and freshly ground black pepper
- 1/2 cup halved cherry tomatoes (or quarters for larger size)
instructions
- Whisk together THE GRACIOUS GOURMET FARMHOUSE TOMATO JAM and balsamic vinegar.
- Season to taste with salt and pepper.
- Toss gently with greens and tomatoes.
Makes 2-3 servings.
